Grades 9–12. Students simulate the enzymatic digestion of starch in the body and deduce that their enzyme converts starch to sugar and acts as a catalyst. The activity includes multiple control experiments and requires deductive reasoning. Extensions allow students to observe the effects of pH and temperature on enzyme activity. Materials are sufficient for 24 students working in pairs.
